Nergishi Kofta

It is a North Indian dish.

INGREDIENTS
  1. Mutton kima-500gm
  2. Egg-8 pieces
  3. Ginger-30 gm
  4. Garlic-30 gm
  5. Chola (chickpea) sattua (powder)-125 gm
  6. Dry chili-8 pieces
  7. Poppy seeds-10 gm
  8. Salt-as per requirement
  9. Curd-500 gm
  10. Ghee(clarified butter)-250 gm
  11. Big cardamom-8 pieces
  12. Clove-6 pieces
  13. Pepper-10 pieces
  14. Cumin-1-1/2 tsp
  15. Kewra water (screw pine)-2 tbsp
  16. Big  size onion-3 pieces
PREPARATION 
  • At first boiled the egg and remove the cover.
  • Then make a paste of ginger and garlic.
  • Now fried dry spices like poppy seeds,cumin,clove,cardamom,dry chili and pepper.
  • Now heat the oil in a pan.
  •  Fried 1 piece of onion and paste it with  curd.
  • Prepare the fried spices powder.
  • And paste rest of the onion.
  • Now mix all spices with mutton kima.
  • Now in the dried pan, saute the chickpea powder and mixed with mutton kima.  
  • Divide the kima equally and cover over the 8 egg surface.
  • Now deeply fry it.
  • Heat Ghee(clarified butter) in another pan and fry ginger, garlic and onion paste with fried spices powder.
  • When the gravy is prepared add the salt and Kewra water (screw pine) in it.
  • Cut the kofta and keep in the gravy.
Now Nergishi kofta is ready to serve with paratha/tandoori roti.

Banana Leaf Baked Fish

It is a very delicious and healthy dish for everyone.

INGREDIENTS
  1. Tomato-2 pieces
  2. Banana leaf-4 big pieces
  3. Olive oil-2 tbsp
  4. Bhetki fillet-500 gm
  5. Onion leaves-50 gm
  6. Salt-as per requirement
  7. Sahi morich (white peeper)-as per requirement
  8. Coconut cream-4 tbsp
  9. Lemon-2 pieces
  10. Coriander leaves-1 bunch
  11. Green chilly-2 pieces
  12. Garlic paste-1 tsp
PREPARATION
  • Preheated the oven at 200 degree centigrade.
  • Remove the seeds from tomato and cut into small pieces.
  • Wash the banana leaves in hot water and cut into require pieces.
  • Wash the fishes fillet and cut into 4 cubes.
  • Spread the oil throughout the leaves and placed the fillet cubes in middle of the leaves.
  • Keep the onion leaves, tomato, coconut cream and salt on the fillet and fold the leaf and bind it with thread.
  • Now bake it 15 to 20 minutes.
  • Prepare paste of Coriander leaves, Green chilly, Garlic paste with olive oil.
  • Open the leaves and spread the paste over the fish.
  • Garnish with lemon, coriander leaves and green chilly.

Now Banana Leaf Baked Fish is ready to serve. Enjoy it.

Potato Cocktail

It is very tasty dish.Its preparation is very easy and delicious food for children.


INGREDIENTS
  1. Salt-as per requirement 
  2. Chopped Ginger-1 tbsp
  3. Kasundi1-2 tbsp
  4. Chopped garlic-1tbsp
  5. Yellow capsicum sliced-1
  6. Tomato sliced-1
  7. Grated cheese-1 cube
  8. Grated egg-1/2 pieces
  9. Coconut milk-1 cup
  10. Chopped coriander leaves
  11. Per boiled potato(scooped)-2/3 pieces
  12. Chopped green chilli-2/3 pieces
PREPARATION
  • Now heat the  refined oil in the pan.
  • Then added  red chilli powder with the scooped potato.
  • Then fry them until their colour changed in golden brown.
  • Now little amount of the oil keep in the pan.
  • Then added the chopped garlic and chopped ginger in the pan.
  • Fry them .
  • Then add the chopped green chilli and scooped potato.
  • And fry them very well.
  • Now add the grated egg and kasundi  and stir them very well.
  • Now add the salt as per your requirement.
  • Now added the coconut milk.
  • Lastly added the grated cheese and coriander leaves
Now our potato cocktail is prepared  and serve it with sauce or coriander chatni.

Fal(Fruit) Madhuri

It is a purely bangali dish which refresh us in summer.It is very healthy and tasty food.
INGREDIENTS
  1. Curd(tak dahi)-4 cup
  2. Honey-4 tbsp
  3. Grapes-both green and black.
  4. Papaya(ripe)-1 middle size.
  5. Banana-4
  6. Orange-2 pieces
  7. Kharmuj
  8. Guava-1 piece
  9. Pomegranate-1 piece
  10. Lemon juice-1 tbsp
PREPARATION
  • First we add the curd and honey.
  • then mix them very well.
  • Now you cut the fruits into small pieces and mixing them well.
  • Then add the lemon juice with the fruits.
  • And keep aside them.
  • Now keep the fruits and dahi in the refrigarator.
  • Don't keep them in the deep freeze.
  • Mix the fruits and dahi before serve it.
Now our fal madhuri is prepared .It is very refreshing dish.Its very good for children.  If you want then you add some fresh cream on it.If you want you also add your favourite  fruits and make this dish more delicious.

Luchir Payesh

Luchir payesh is a pure bengali sweeyt dish.Its preparation is very easy.Adults and kids are like it very much.Now here we show the preparation of this dish.
INGREDIENTS

  1. Flour(maida)-200 gm
  2. Milk-1 1/2 litr
  3. Ghee or refined oil-1 cup
  4. Condensed milk-1/2 cup
  5. Sugar-500 gm(as per your requirement)
  6. Cardamom powder-1/2 tsp 
  7. Michri powder -100gm
PREPARATIO
  • First make a dough mixing  with 1tbsp ghee,water and flour.
  • From the dough we make a small balls.
  • Then we make small luchis.
  • Now boil the milk.
  • When milk is boiled then we add condensed milk.
  • Now add the michri powder and sugar.
  • Then add the luchis.
  • Cook it for few times.
  • Lastly we add the cardamom powder.
Now our luchir payesh is prepared.Enjoy it.

MANGSHER(MUTTON) KICHDI

Mangsher kichdi is a very popular dish in West Bengal.Now here we show how it can prepared.It is also a delicious dish.
INGREDIENTS

  1. Mutton -500 gm boneless and cut with small pieces.
  2. Govindobog chal(Vasmati rice) -500gm.
  3. Moong dal -500gm.
  4. Oil -3/4 th cup.
  5. Ghee -150 gm.
  6. Ginger-garlic paste -1 1/2 tbsp.
  7. Chopped ginger -1 tsp.
  8. Onion paste -1 cup.
  9. Chopped onion -2 middle size.
  10. Garam masala -1 tbsp.
  11. Diced potato-2 pieces
  12. Tomato-2 middle size.
  13. Cumin paste-1 tsp
  14. Bay leaves-2 

  • PREPARATION
  • Fry the dry moong dal till its colour change to brown.
  • Now marinate the mutton with curd,garlic paste,ginger paste and onion paste and keep it for 1 hour.
  • Now heat the oil on a pan and fry the potato till their colour changed in golden brown.
  • Now pour the water in a cooker and add the dal and steam it.
  • When the potatoes are fried then keep it aside and add the bay leaves,cumin,red chilli and garam masala.
  • Now add the chopped onion and fry them till the colour is changed brown.
  • When the onion fried then we add giner paste,juilenne ginger and tomato and lightly fried them.
  • Now add the marinated mutton and mix the spices very well in the oil.
  • And add the turmeric powder and green chillies.
  • Now when the mutton is cooked then add the rice and mix them very well.
  • Mixing the dal very well with them.
  • On the other hand we heat water on separate pan.
  • Now add the hot water with the mutton,rice,dal and patatoes.
  • And also add the salt  and sugar as per requirement.
  • Now keep a lid on the pan and cooked it.
  • When it cooked we add the ghee and garammasala paste.
  • Now on the other pan fry the chopped onion.
  • Now add the cashew nut paste and fried onion in the kichdi. 
Now our mutton kichdi is prepared.It serve hot.
TIPS: we use curd in mutton for cooked it fast.

PALAK (SPINACH) PANEER

Palak paneer is a very healthy and easy to cook dish.Now here we so that how can it make. Palak Panner is a North Indian dish.

INGREDIENTS
  1. Palak paste-2 cup
  2. Paneer-150gm
  3. Green chilli-4 nos
  4. Salt as per requirement
  5. Ginger + garlic+ onion paste+ tomato paste-1 bowl
  6. Fresh cream-3 tbsp
  7. Cumin seeds-1/2 tsp
  8. Lemon juice_1 tbsp
  9. Oil-2 tbsp
  10. Sugar-11/2 tsp
PREPARATION
  • Wash  the spinach thoroughly  in the running water.
  • Remove stems from spinach.
  • Paste the spinach with green chillies.
  • Diced paneer into small pieces.
  • Now heat oil on the pan.
  • Now cumin seeds are added in the oil.
  • When the seeds change their colour we add the ginger,garlic,onion and tomato paste.
  • Add salt,sugar and mix them well.
  • And saute them for few minutes.
  • Then add the palak paste and stir them.
  • If the gravy is too thick then we added some water.
  • Before adding the paneer cube it's better to shallow fry them.
  • When the gravy is come to prepare then the paneer is added.
  • Now mix them well.
  • After that add the lemon juice and stir well.
  • Now fresh cream is added and our palak paneer is prepared.
  • Garnish it with chopped onion and shallow fried paner.
It serve hot  with chapati/paratha.

MUTTON KASHA

Mutton kasha is a very delicious recipe.Now here we find how to prepare it.
Mutton Kasha

INGREDIENTS 
  1. Mutton-750 gm
  2. Curd -300gm
  3. Tomato-2 pieces
  4. Ginger paste-2 tbsp
  5. Garlic paste-1 tbsp
  6. Onion-4 medium size(2 onions are paste and 2 onions are finely chopped)
  7. Bay leaves-2
  8. Turmeric powder-3 tsp
  9. Chilli powder-3 tsp
  10. Oil-1/2 cup
  11. Salt as per requirement
  12. Little amount of sugar.
  13. Garam masala-2 tsp
PREPARATION
  • First clean the mutton very well.
  • Then marinate the mutton with curd,onion paste,ginger paste,garlic paste and all other spices.
  •  Keep the marinated the mutton on 1 hours.
  • Now heat the oil on a pan.
  • Then added the bay leaves and chopped onion and tomato and fry them.
  • When the colour of the onion changed to light brown then add the marinated mutton.
  • Now cook them in medium heat .
  • When the oil is separated from the spices and mutton are cooked.
  • Then add some hot water.If you want then you use pressure cooker.
  • Steam the mutton until 3 sities.
  • Now keep it from heat.
  • Add garam masala powder.
Now our mutton kasa is ready to eat.It served with hot rice/fried rice/rooti.

ALOO(POTATO) CHAAT

INGREDIENTS
  1. Potatoes-3 boiled and peeled
  2. Onion(chopped)-2
  3. Ginger(chopped)-5gm
  4. Coriander leaves-1 tbsp
  5. Green chili-2 pieces
  6. Red chili powder-2 tbsp
  7. Chat masala-1 tsp
  8. Salt-as per requirement
  9. Lemon(middle size)-1 piece for juice
  10. Tomato-1 piece
  11. Tamarind pulp
  12. Roasted cumin powder-1tsp
  13. Sugar-small amount 
  14. Juribhaja
  15. Cucumber-1(chopped)
PREPARATION
  • Cut the boiled aloo into small pieces.
  • Now add the chopped onion,cucumber,green chillies,and small pieces of tomatoes.
  • Add the red chilli powder,roasted cumin powder,chaat masala,salt and sugar.
  • Mix them very well .
  • Add the chutney and lemon juice according to your taste and toss to coat evenly.
  • Now take another bowl and place the mixture.
  • Now for garnishing we add the chopped coriander leaves and juribhaja.
Now our delicious and tasty aloo chaat is ready to serve.

SHET SUNDARI ROHU

It is a very easy and delicious preparation of rohu fish.
SHETSUNDARI ROHU

INGREDIENTS

  1. 1 kg rohu fish.
  2. salt as per requirement.
  3. 2 tbsp turmeric powder.
  4. soya oil/sunflower oil-1 cup.
  5. ghee(clarified butter) 1 tbsp.
  6. 2 bay leaves.
  7. garam masala(spices mixture).
  8. 2 tbsp ginger paste.
  9. 2 tbsp garlic paste.
  10. 2/3 ginger.
  11. kismis(raisins).
  12. kaju(cashew nut) paste.
  13. onion paste 2/3 tbsp.
  14. coconut milk-1/2 cup.
  15. garam masala powder 
  16. sweet curd(yogurt)
curd(yogurt)-3 tbsp.

  • PREPARATION

    • At first clean fish pieces very well.
    • Then salt and turmeric powder mixed with the pieces .
    • Now heat the oil in the frying pan.Then keep the fish on the heated oil and fry the fish.
    • When the fish are fried then keep aside them from flame.
    • Now  in the remaining oil we add ghee,bay leaves ,garam masala and garlic .
    •  Fry them lightly and  now add the ginger paste,garlic paste, onion paste ,salt. 
    • Now cook them until the oil is separated from the spices.
    • Then add the kismis and kaju paste and coconut milk.
    • Cook them 5 minutes. 
    • After 5 minutes add the curd and cook for 2 minutes.
    • Now add garam masala powder and turn off the flame.
    Now our shet sundari rohu is ready to serve.If you wish  you can add green chilies.It serve with hot plain rice or fried rice.  



  • BHETKI MAACHER PATURI

    Paturis are very easier dish than any normal fish recipe as it does not need constant  monitoring while cooking only we need to marinate  and put it in the oven/frying pan to bake.

    BHETKI MAACHER PATURI

    INGREDIENTS
    1. Bhetki -1/2 kgs(preferably fillet)
    2. Mustard oil -3 tbsp.
    3. Mustard paste -2 and 1/2  tbsp
    4. Coconut paste -2 and 1/2 tbsp.
    5. Green chilly -4 nos.
    6. Turmeric powder -1 tsp.
    7. Salt to taste.
    8. Banana leaves -10x10 inches.

    PREPARATION

    • Mix the coconut paste,turmeric powder,mustard paste, mustard oil and salt very well.
    • Now marinated the fish with the mustard and coconut mixture and keep it for 30 minutes.
    • Take a banana leaf and place each marinated fish on a banana leaf and fold the leaf and bind it with thread.
    • Take a frying pan and grease it with oil.
    • Then keep all the tied  fish pieces on the frying pan.
    • cover it with banana leaf and cover it with a lid.
    • cook it with low flames for 10 minutes.
    • Then turn all the pieces and cook other side for 10 minutes.
    • Remove the lid and keep the fishes on the plate.
    • Serve the paturis with the banana leaves.Enjoy the aroma of the paturis.
    Paturi is also prepared in Microwave oven.It is cook in microwave oven easily and quickly.
    • The process of marination is same as before.
    • After marinating the fishes and covering them with banana leaf and keep them  in a pre-heated  oven 20-25 minutes at 80% power.
    • If your microwave oven does not have a convection mode then turn the pieces upside down after 15 minutes.Then bake the other side for 10-15 minutes.
    Now our paturi is ready to eat. Serve it with rice,fried rice and polau.

    Chilli Chicken

    Chilli Chicken Chili chicken is a chines dish.It's very easy to cook and very tasty food
    Preparation time is 5 minutes
    cooking time around 45 minutes.
    standing time is 8 min.

    INGREDIENTS

    1. 1 kg chicken
    2. 2 tbsp chili sauce
    3. 2 tbsp garlic paste
    4. 15 green chili sliced
    5. 2 tbsp white viniger.
    6. 3 tbsp oil.
    7. 3 large sized finely chopped onion.
    8. 1 tbsp red chili powder
    9. salt as per requirement.
    10. 1/2 tsp turmeric powder.
    11. 1/2 tsp sugar
    12. soya sauce

    Preparation

    • Heat oil in a pan.
    • Add chopped onion and sorted until the color is golden brown.
    • Now add chicken pices.
    • Also add turmeric powder,garlic paste, red chili powder and salt.
    • Sorted them until they mix well.
    • Now add water and cover it.
    • Boiled the chicken until it cooked 3/4 in low heat.
    • Add chili sauce,soya sauce.
    • Also add viniger, green chilies.
    • When the chicken is cooked.
    • Remove it from heat.
    Now chili chicken is ready to eat.
    It serve with various type of fried rice.

    Tips: Add green green chilies as your choice.

    CHICKEN WITH DICED TOMATO

    CHICKEN WITH DICED TOMATO Chicken with diced tomato is very healthy and delicious recipe

    INGREDIENTS

    1. 5/6 pieces chicken drumsticks
    2. 3 medium size tomatoes.
    3. 1/2 cup oil
    4. 1 tbsp garlic paste.
    5. 1 tsp red chili powder.
    6. 1 tbsp ghee
    7. 1 cup hot water
    8. 1 diced carrot

    PREPARATION

    • Now take 5/6 chicken drumsticks
    • Take three medium size tomatoes.
    • Make the smooth paste of tomato.
    • Heat oil in a pan.
    • Fry the chicken drum stick
    • It coloured brown.
    • Now add the tomato paste
    • Add the garlic paste.
    • Add red chili powder
    • Mix with chicken very well.
    • Add salt and warm water
    • cooking the gravy in low heat
    • In a separate pan heat the ghee.
    • 2 tomato cut in medium pieces.
    • Add it in ghee.
    • 2 min saute it.a,/li>
    • Add the chicken with gravy.
    • Mixed well.<
    • Remove it from heat

    Serve it with hot rice.Enjoy your food

    Chicken Curry

    Chicken Curry
    Chicken curry is very easy to cook and very tasteful recipe. Preparation time is 5 min and cooking time is 40 min.

    INGREDIENTS

    1. 1 kg chicken.
    2. 2 tsp turmeric powder.
    3. 3 tsp red chili powder.
    4. 2 large sized onion paste.
    5. 2tbsp ginger paste
    6. 1 tbsp garlic paste.
    7. 2 tsp garam masala(clove,cinnamon,cardamom).
    8. 2 tbsp oil.
    9. 2 bay leaves.
    10. 3 tbsp curd
    11. salt to taste
    12. add 2tsp sugar
    13. Coriander leaves for garnishing.
    14. 2 tbsp tomato puree.
    15. finely chopped 2 large size onion

    PREPARATION

    • heat the oil in a pan.
    • fry the onion till golden brow
    • now move the onion from oil.
    • add onion paste
    • and ginger-garlic paste
    • and all the spices added to the chicken.
    • now the chicken is marinated by all the spices
    • the chicken is added in the remaining oil.
    • now cook them in low heat
    • cook them until oil is separated from spices.
    • now add some hot water and cover it.
    • now the chicken is cooked
    • add the fried onion.
    • turn off fire.
    • garnish with chopped coriander leaves.
    Now our chicken curry is ready to eat.Serve it with rooti or hot rice.

    Aloor Dum

    Aloor dum is a very popular dish.It is very tasty and chatpata dish.

    INGREDIENTS

    1. 1 kg potatoes
    2. 1 tbsp ginger paste
    3. 1/2 tbsp garlic paste
    4. 3 tbsp onion paste
    5. 1 medium size onion finely chopped
    6. 1 tsp cumin seeds
    7. 2 bay leaves
    8. 4/5 green chilies
    9. fresh coriander leaves
    10. 1 tbsp kasauri methi
    11. 2 tbsp curd
    12. 1 tbsp kashmiri mirch
    13. 1/2 tbsp turmeric powder
    14. 1/2 tbsp cumin powder
    15. 1/2 tbsp coriander powder
    16. salt as per requirement
    17. sugar as you wish
    18. 2 tbsp oil
    19. garam masala(clove,cardamom,cinnamon)

    PREPARATION

    • First steam the potatoes 10 minutes.
    • Now drain the water from the potatoes
    • .
    • Heat the oil in a pan
    • Fry the boiled potatoes in golden brown
    • Now potatoes are separated from oil
    • Bay leaves and cumin seeds are added in the remaining oil.
    • Now added the finely chopped onion and fried them.
    • All the spices are mixed in curd and mix them well.
    • The mixture added in the pan.
    • potatoes are also added.
    • Now cook them in low heat.
    • Until the oil separated from spices
    • If you wish you can add some water
    • And now add kasuri methi and cover it
    • Remove the pan from heat.
    • Now add garam masala.
    • Garnish with green coriander leaves.
    Now our delicious aloo dum is prepared.If you want you can keep it with gravy.
    You enjoy it with veg fried rice/paratha/puri etc.
